Piña Colada Spritz
Hosting an elegant party poolside calls for a drink that screams vacation by the beach but a bit stepped up. To me, that drink has to be a Piña Colada. Nothing transports me to a tropical locale and warm breezes like a piña colada. But for this event, it has to be a Piña Colada with class.
My Piña Colada Spritz is just the right combination of elegant and tropical, and the best part is there is no blender required. The base mixture here brings together pineapple juice, coconut cream, and lime for a drink that’s tropical and just the right balance of sweet and tart. I serve it in a champagne glass and top it off with prosecco for a cocktail that’s truly elegant.
What is extra fun about this cocktail is that no one is expecting a Piña Colada to be served in a champagne glass. So there’s this moment where guests may wonder exactly what the cocktail is–until they take a sip and realize it’s all the flavors of a traditional Piña Colada but lighter, brighter, and with fizz! It’s fun to watch guests make this connection and enjoy this beauty of a cocktail. A bit of shredded coconut on the rim really drives that tropical drink idea home.
These poolside cocktails are really special both in their beautiful color and a flavor that can transport. They’re a wonderful addition to my Chic Pool Party Menu, and I love to serve them with Frozen Lime Grapes that echo all of the flavors in this drink. Piña Colada Spritz
Ingredients
Method
- Prepare your two champagne glasses by running a lime around the rim. Place shredded coconut on a small plate and put the glasses upside down on the plate. Press the shredded coconut onto the lime rim. Set aside.
- Fill a cocktail shaker with ice. Add rum, cream of coconut, pineapple juice, and lime juice. Shake for 20-30 seconds.
- Strain into the two prepared champagne glasses. Top with prosecco. Garnish with a lime slice if desired. Serve cold and enjoy!

Hosting Notes
- Try to serve these drinks as cold as possible. Chill the prosecco, and don’t skip shaking the base with ice.
- If you’d like, you can batch the base of the cocktail a few hours in advance of the party. Then shake with ice before pouring in glasses.
- I love serving this drink in a champagne glass as it’s just very unexpected. You could also do a coupe glass for charm.
- I rimmed the glass in shredded coconut. You could also do lime sugar on the rim or just serve with a small wedge of lime. A little umbrella would be fun too!

My Piña Colada Spritzes are the kind of cocktail I get the most excited about. They blend a sense of beachy fun and nostalgia with just a splash of sophistication to serve a drink that makes your guests feel both refined and ready to party.
