An Elegant Pool Party Menu: Chic and Easy Poolside Food

Hosting a pool party, particularly late in a hot summer, can easily become about convenience over everything else. But sharing simple food with some thoughtful upgrades doesn’t have to be time consuming! I’m sharing a menu that’s full of fun twists on classic snacks and drinks that keeps hosting chic and carefree!

An Elegant Pool Party Menu

All summer long, my backyard and pool feel like an open house. My kids practically live in the pool all summer, and there are always friends and family dropping by to hang out. It’s the perfect place to kick back and soak in all those summer vibes.

But I notice that as the summer goes on, the gatherings become more and more impromptu. Suddenly, convenience becomes the biggest factor in feeding everyone by the pool. And while ordering a pizza and opening a bag of chips certainly provides some poolside nibbles, it doesn’t do much to make the gathering feel special.

So for the last pool parties of the summer, I love to step it up just a notch with my Elegant Pool Party Menu. Trust me, I’m not looking for added steps for myself—I want to keep things really simple and carefree. But I love serving a menu that feels thoughtful, unique, and memorable, because it makes those last summer pool parties all the more special.

This menu is really fun for guests because it has some wonderful surprises in it. I start with a cocktail that has all the flavors of a traditional Piña Colada, but I serve it as a spritz. It’s effervescent and classy—totally unexpected. Alongside the cocktails, I keep guests cool with creamy frozen grapes that pack a punch of lime. By the pool, I’m serving popcorn with all the flavors of your favorite Friday night pizza, a twist on Chex Mix made with hot honey and pepperoncini brine, and satisfying and beautiful Caprese Pinwheels. Then comes the showstopper: a gorgeous pink-marble Strawberry Lemonade Ricotta Cake that’s as inviting as it is delicious.

All of these recipes are simple and worth the little bit of time they take to make your pool party feel truly elegant and memorable. These are the last pool parties of the summer, so let’s go out on a high note.

Piña Colada Spritz

I love these cocktails that are a twist on a traditional Piña Colada. They have a certain whimsy in serving them–because I typically offer them in a champagne glass. Guests aren’t expecting a bright white cocktail in this type of glass, so they grab one, take a sip, and you can just see their eyes light up. That’s because this cocktail has all the flavors of the traditional drink, but it’s like a lighter, cooler, sprightlier little sister. A float of prosecco gives this spritz its effervescence. And the best part? No blender required.

Pizzeria Popcorn

Popcorn is a perfect snack for guests to nibble on while they’re lounging by the pool. But this isn’t just any popcorn. This is really delicious popcorn that tastes like pizza! After popping the popcorn, I toss it in melted butter, sun-dried tomato oil, lots of oregano, and parm to give it that unmistakeable pizza flavor. Try adding in pepperoni or crisped pancetta for a fun mix in!

Hot Honey Pepperoncini Chex Mix

It’s simply not a party without Chex Mix. But this Chex mix is truly stellar and sure to elevate the fun at your party! I’m romanticizing the classic recipe by giving it a spin that tastes almost like you’re biting into an Italian sub sandwich. The cereal, pretzels, and peanuts are tossed with a butter mixture that includes the brine from the pepperoncini jar, hot honey, lots of spices, and parm. After everything comes together in the oven, I add in little parmesan cheese bites to the final mix. So so delicious, and completely irresistible with your toes in the water.

Caprese Pinwheels

Pinwheel sandwiches by their nature have a bit whimsy and fun to them. They’re nostalgic, always reminding me of childhood parties. And while these pinwheels certainly deliver the personality, they’re decidedly more grown up. They are a take on a traditional caprese with lemon whipped ricotta, sun-dried tomatoes, and basil pesto. I love the way they look all crowded on the serving plate, basically daring your guests not to have a good time.

Creamy Lime Frozen Grapes

These bite-size refreshers are the perfect no-cook treat to serve alongside an icy cold cocktail. I like to make a mixture of Greek yogurt, lime, and honey, and then coat red grapes in them before freezing. The flavor profile perfectly mimics the Pina Colada Spritz cocktail, especially when you add a bit of coconut flake before freezing. These are lovely little sweet treats that will keep your guests cool on a hot day.

Strawberry Lemonade Ricotta Cake

Strawberry lemonade is so refreshing on a hot day, and that pink color is so universally appealing. I had to figure out how to serve it in dessert form! I decided the best way to do that was with a ricotta cake. The ricotta gives the cake a moist crumb that also has a bit of density that reminds me a bit of a lighter cheesecake. I pump up the flavor of ricotta cake by adding in lemon juice and zest. Then when the cake is in the pan, I swirl strawberry puree throughout. After baking, I top this one with a lemon glaze which really drives home that idea of strawberry lemonade. It’s easy to eat in wedges by the pool, and the marbling is so pretty!

Hosting Notes and Timeline

By late summer, I’m usually at a place emotionally where I want to keep hosting romantic get togethers, but they need to be carefree. It’s definitely not the time for anything fussy or complicated. And what’s nice about this poolside menu is that it can be made almost entirely in advance. So there will be nothing to do come party time but pour myself a Piña Colada Spritz, grab a pool float, and hang out with my guests.

Here’s a quick breakdown to make preparing this menu super simple.

  • The Day Before the Party:
    • Make the Chex Mix
    • Make the Pizzeria Popcorn
    • Bake the Strawberry Lemonade Ricotta Cake. I’d wait to add the glaze until the morning of the party.
    • Tidy up around the pool and decide where you’d like to place the snacks. For this party, I like to fill up small bowls with snacks and place them in different areas around where guests are relaxing and conversing rather than one big buffet. I even like to have one area of food that’s close to the pool and can almost be swim-up, if your set up allows.
    • Set aside the serving bowls you’d like to use.
  • The Morning of the Party
    • Make the cocktail base. Chill the prosecco. Gather the champagne glasses.
    • Make and freeze the Creamy Lime Grapes
    • Mix together the lemon glaze for the cake and glaze it.
    • Make the Caprese Pinwheels and keep them in the fridge.
  • When Guests Arrive
    • Set the Chex Mix and Popcorn out in serving bowls.
    • Slice the Caprese Pinwheels and set on a plate.
    • Rim the champagne glasses and start making cocktails to serve as guests arrive.
  • During the Party
    • Offer Creamy Lime Grapes with cocktails or just as an aperitif later in the party. They will melt out in the sun so this is more of a passed appetizer situation.
    • Slice and serve the Strawberry Lemonade Ricotta Cake about an hour into the party, when guests are ready for something sweet. I think this is best to keep in the fridge until you’re ready to serve as it keeps together a bit better this way.
    • Enjoy your time with friends!
