I am a host who firmly believes it’s not a party until the Chex Mix comes out. And that’s any time of year, not just a holiday party. It’s probably the Mid Century Modern Romantic in me, shining through. After all, the original recipe for Chex Mix was introduced in the 1950s and became extremely popular for hostesses to serve at parties for the same reasons I love to serve it today–its simple, inexpensive, a huge crowdpleaser, and just generally fun. Those things check off my hosting essentials with ease.

But the Chex Mixes I like to serve today are almost always an elegant upgrade on that original recipe (though of course that original recipe is an absolute classic for a reason). And when I’m throwing a fancy pool party, I love to include a Chex Mix that’s extra flavorful, won’t leave fingers messy or sticky, and one that’s totally addictive. This Hot Honey Pepperoncini Chex Mix is everything I want–and it’s an absolute blast to indulge in on top of everything else.

What makes this Chex Mix so special is in the name–the butter mixture that the cereal, peanuts, and pretzels are coated in includes both hot honey and a splash of the brine from the pepperoncini jar. This, combined with a ton of parmesan and garlic, makes for a Chex Mix that almost tastes like you’re sinking your teeth into a delicious Italian sub. It’s bold in its flavor, but not overpowering in terms of heat or tang. It’s the perfect snack to set out in small bowls and let guests nibble on as they’re lounging by the pool, listening to upbeat pool tunes. And it’s the kind of snack mix (like all Chex Mix including my holiday sparkle version), that seem to disappear almost the minute they arrive at the party.

I like to serve this Chex Mix as part of my elegant pool party menu. That menu is the most delightful for hot weather entertaining as it makes pool food accessible but still refined. It includes pizza popcorn, caprese roll ups, creamy frozen lime grapes, and a to-die-for Piña Colada Spritz.

Ingredients
  

Dry Mix
  • 3 cups Rice Chex
  • 3 cups Corn Chex
  • 2 cups mini pretzels
  • 1 cup roasted peanuts
  • 1 cup Parmesan crisps
Coating
  • 5 tbsp butter, melted
  • 1 tbsp olive oil
  • 1 1/2 tbsp hot honey
  • 1 tbsp pepperoncini brine
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 cup finely grated Parmesan

Method
 

  1. Preheat the oven to 250ºF.
  2. In a large mixing bowl, add the Rice Chex, Corn Chex, pretzels, and peanuts.
  3. In a medium size bowl, combine the melted butter, olive oil, hot honey, pepperoncini brine, garlic powder, onion powder, dried oregano, smoked paprika, and finely grated parmesan. Add to the dry ingredients and toss to coat.
  4. Prepare a baking sheet with cooking spray. Spread the mixture out into an even layer on the baking sheet.
  5. Bake for 60 minutes, tossing every 15 minutes. Let cool on the baking sheet, then transfer to a serving bowl. Add the parmesan crisps and toss. Serve and enjoy!

Hosting Tips

  • What makes Chex Mix extra hosting friendly is that it can be made well in advance–up to 3 days in advance and stored in an airtight container. The only issue there is making sure your family knows it’s for the party–otherwise I promise that Chex Mix will up and disappear.
  • I like to add the cheese crisps at the end here–adding them into the mix at the beginning and then baking can burn them. They are a truly delicious add in to the mix.
  • If you’d like this to have more spice, feel free to up the hot honey or add in some red pepper flake. The recipe as written has a bit of kick but not a ton of heat.
  • Don’t skip the step of mixing the Chex Mix every 15 minutes on the pan while baking–it makes sure everything bakes evenly.
  • I think the fun of Chex Mix is playing with the ingredients. Make this your own by adding in other cereal, changing the type of nuts. choosing different types or shapes of pretzels. Or try mixing in bagel chips or other crackers in the end.

My Hot Honey Pepperoncini Chex Mix brings lots of flavor and is just as at home poolside or in a bowl watching Christmas movies during the holidays. I designed it as part of my Elegant Pool Party Menu. It provides a savory snack, alongside the pizzeria popcorn, to keep everyone snacking, chatting, and happy.

This Chex Mix would also make a wonderful addition to my picnic menu as it would give that satisfying crunch alongside my Turkey, Brie, and Plum Baguette Sandwiches. Or add it to the Sip, Sparkle, and Swoon Holiday Party for a fun flavor burst on that beautiful holiday table.

The truth is, you don’t need an occasion to make this irresistible Chex Mix. It’s the perfect snack to keep on hand in case of unexpected friends dropping by or for an impromptu reality TV night. Whether you’re enjoying it poolside or just on the couch, it’s a total winner.
