Elegance and tacos don’t always go hand in hand. Tacos are beloved as street food—messy, spicy, and brimming with toppings. But when you simplify them, focusing on one beautifully cooked protein and a single, balanced topping, they become something much more refined without ever losing their sense of fun.

Tacos are surprisingly perfect for date night when approached this way. They’re universally loved, easy to eat, and just a little playful. For a relaxed evening at home, those qualities set a tone that feels effortless and inviting—flirty, but still sophisticated.

Using shrimp as the base immediately brings a touch of refinement. Here, the shrimp are cooked in a cast iron pan to create a lightly crisp exterior, then coated in a smoky, spiced tomato sauce that adds depth and warmth.

I keep the toppings simple: a creamy lime slaw that brings brightness, texture, and just enough richness. It does the work of multiple toppings in one—citrus, crunch, and a hint of creaminess—without overwhelming the taco.

Ingredients
  

Crispy Chipotle Shrimp Tacos
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp tomato paste
  • 1 tsp chipotle powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 2 tbsp olive oil
  • salt and pepper
  • zest of 1 lime
  • small tortillas
Creamy Lime Slaw
  • 1 cup coleslaw mix
  • 1 lime, juice and zest
  • 1 tsp honey
  • 3 tbsp sour cream
  • pinch of salt
  • cilantro, for topping
Spiced Roasted Sweet Potatoes
  • 2 medium sweet potatoes, cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • kosher salt and pepper

Method
 

  1. Start with preparing the sweet potatoes. Preheat the oven to 400ºF.
  2. On a greased baking sheet, toss the sweet potatoes cubes with the oil, spices, and salt and pepper. Use your hands to make sure it's all tossed evenly. Spread the sweet potatoes out evenly on the baking sheet.
  3. Bake for 25-30 minutes, flipping once. The potatoes should be golden and caramelized. Top with lime zest.
  4. For the Creamy Lime Slaw, mix the sour cream with lime juice, zest, honey, and a pinch of salt. Toss the coleslaw mix with the the sour cream mixture and let sit for 10 minutes before serving.
  5. For the Crispy Chipotle Shrimp Tacos: Pat the shrimp dry and season lightly with salt and pepper.
  6. Heat a cast iron pan over medium high heat with olive oil.
  7. In a small bowl, mix the tomato paste, chipotle powder, smoked paprika, and cumin. Add a splash of water to get a smooth paste. Toss shrimp in the paste.
  8. Add the shrimp to the pan and cook on each side, 2-3 minutes per side. Once the shrimp are cooked and pink, remove from heat. Finish with lime juice.
  9. Plate the small tortillas and spoon a few shrimp onto the tortillas. Top with a bit of the Creamy Lime Slaw. Serve with the roasted sweet potatoes on the side.

Hosting Notes

Here are a few tips for serving these tacos with ease:

  • Don’t overstuff these tacos–the point is not to get as much in the taco as possible but to be serving tacos that feel like a composed bite.
  • If you like the dressing on the citrus slaw, feel free to double the dressing and drizzle it on top of the sweet potatoes as well–they’re double delicious that way.
  • Spice levels differ–if you’d like something a bit spicier, feel free to add more chipotle powder or even mince a chipotle pepper in adobo sauce and add that in to the shrimp.
  • Sliced avocado would also be delicious in these tacos if you’d like to add–but be careful because they may start getting messy.
  • The citrus slaw would also be delicious if you subbed orange for lime.
