Having friends and family over for a meal should be fun for everyone, including the host. But too often I’m running around doing that last minute kitchen dance to get everything finished and on the table. It’s more stressful than it needs to be when I’d rather be focussing on getting ready, grabbing a drink, and catching up with everyone. I decided to create this Casual Dinner Party Menu for 6 as a way to host with ease without sacrificing elegance and an impressive meal.

If you want everything to feel easy and laid back, here’s how I’d do it:

Earlier in the day

  • Prep and start the white chicken chili in the slow cooker
  • Prepare in advance any of the toppings you’d like to serve
  • Bake the brownies and let them cool
  • Make the lemon parmesan vinaigrette

Right before guests arrive

  • Set the table
  • Pull out bowls, ladle, and toppings for the chili
  • Slice the brownies and set them out on the table–everyone can just grab one once they’ve finished their meal
  • Prepare the arugula salad but don’t dress it yet. Set it out along with the vinaigrette so that the vinaigrette will be room temperature

Just before serving

  • Toss the arugula salad
  • Stir the brie into the chili and add a hit of lime juice
  • Pour a glass of wine and enjoy the night

For this menu, you won’t need too many special kitchen items. For the white chicken chili, you’ll need a slow cooker. A ladle and low bowls are lovely for serving this so everyone can add extra toppings. A salad bowl will be nice for the simple arugula salad, along with salad servers. I like to shake my vinaigrettes up in a mason jar to keep things simple. And then for the brownies, you’ll need an 8×8″ pan for baking them. I like to serve them on an interesting shaped cutting board or a cake stand as it keeps things casual but still delivers the wow factor.
