Everything Roasted Broccoli with Everything Tahini Dip
I’m so excited to share this spectacular side with you all today!
A great vegetable side is everything, and there are plenty of meals where a terrific side like this comes in and steals the show. Just last week, for example, my mom and I celebrated her birthday at Girl and the Goat downtown. And while everything was truly delicious, it was the green beans that I think will be remembered the most. They had a kind of sesame sauce and salty cashews–so so amazing!
Roasted broccoli is one of my absolute favorite ways to enjoy veggies. I love to roast broccoli and incorporate it into a meal like ramen salad or an interesting grain bowl. But as a side dish, it’s wonderful too! My kids are not huge veggies eaters, but roasted broccoli they’ll eat by the bowlful. We have it all the time.
I usually just add kosher salt to the broccoli to roast, but recently I had the idea to roast it with Everything but the Bagel seasoning. And let me tell you, this was a fantastic idea! The crispiness of roasted broccoli already gives you kind of a potato chip feel and taste. Adding garlic, onion flake, and sesame in an everything mix just enhances that feel. And then adding a tasty dip? Forget it!
As a side note–everything bagels have been my favorite bagel my entire life. Whoever came up with the idea of just selling the everything seasoning deserves all the flowers. And bagels.

The key to delicious roasted broccoli is getting the broccoli as crisp as possible. My trick for that is using bagged, pre-cut broccoli (rather than buying a head of broccoli) and not overcrowding the pan. The reason for the pre-cut broccoli is that it’s already pre-washed. If you buy a head of broccoli and wash it, you have to get it DRY before you roast. If it’s not 100% dry, the broccoli steams rather than roasting. So if you want to use a head of broccoli, wash and dry a few hours before you’re ready to roast it in order to make sure it’s 100% dry.
You will also want to make sure you don’t overcrowd the pan. The broccoli will cook down, but you want every piece of broccoli to have contact with the pan–they should not be smushed together! And keep the broccoli florets small–that keeps them crispy too!
The Everything Tahini Dip here is so good, and I think would be a perfect complement to other roasted veggies as well (roasted sweet potatoes comes to mind). The dip has that sesame/tahini taste, but the everything seasoning comes through. If you’re a lemon lover, feel free to bump up the lemon to two lemons here. This dip as written is not overly lemony.
The Everything Roasted Broccoli and Everything Tahini Dip would be a great side for any kind of protein. I think it would go so nicely with a Baked Chicken Parmesan or Mustard Roasted Salmon. Heck, you could even serve it with burgers as a replacement for fries!

How I Make My Everything Roasted Broccoli and Everything Tahini Dip
Start by preheating the oven and preparing your pan. I like to put aluminum foil down and spray with cooking spray–no way do you want this broccoli to stick to your pan.
Cut up the broccoli in bite size chunks. If you want crispy broccoli, the smaller chunks are better. Place them on your pan and drizzle with olive oil. Sprinkle on the Everything but the bagel Seasoning. Use your hands to massage the oil and seasoning in to the broccoli, making sure all the broccoli is coated.
Roast the broccoli for 20 minutes–seriously, this comes out perfect every single time like magic!
While the broccoli is roasting, whisk together the Everything Tahini Dip. In a bowl, mix together tahini, Everything but the Bagel Seasoning, lemon juice, yogurt, and water. When you start mixing, the tahini can look sort of broken up. Just keep whisking until you get a smooth consistency. You may need to add more water to get a desired texture for the dip that’s not too thick–play it by ear.
That’s it! Transfer the broccoli and dip to your serving platter and watch your guests devour their veggies!

Ingredients
- Everything Roasted Broccoli
12 oz broccoli florets (or 1 head of broccoli)
2 Tbsp extra virgin olive oil
2 tsp Everything but the Bagel seasoning
- Everything Tahini Dip
1/4 cup tahini
2 tsp Everything but the Bagel seasoning
1 lemon, juiced
2 Tbsp plain Greek yogurt
Directions
- Preheat the oven to 425ºF. Prepare a baking sheet with cooking spray.
- Dice the broccoli florets into small, bite-sized pieces, and place on the baking sheet. Drizzle with olive oil and add the Everything but the Bagel seasoning. Using your hands, massage the broccoli so that every piece is covered with oil and seasoning. Spread out the broccoli in a single layer on the pan.
- Roast for 20 minutes until broccoli is brown and crisping.
- While the broccoli roasts, whisk together the Everything Tahini Dip. In a small mixing bowl, mix together the tahini, Everything but the Bagel seasoning, lemon juice, Greek yogurt, and 1 Tbsp of water. Keep mixing until you get a creamy consistency. If you’d like a thinner consistency to the dip, add another tablespoon of water or lemon juice.
- Transfer the broccoli and dip to a serving plate and dig in! Enjoy!
