Turkey, Brie, and Plum Baguette Sandwich with Honey Thyme Mustard

Freshly baked baguette, roast turkey, sliced brie, and sweet slices of ripe plum make for the perfect picnic sandwich. Smother the bread with a smear of honey thyme mustard for that extra pop that balances out the creamy and sweet notes. My Turkey, Brie, and Plum Sandwich is truly a picnic winner.

Ingredients
  

  • 1 French baguette
  • 6-8 oz sliced, roasted turkey
  • 4-6 oz brie cheese, sliced
  • 1 ripe plum, thinly sliced
  • 1 cup arugula
  • 1 tbsp olive oil
  • 1/2 tbsp balsamic vinegar
  • salt and pepper
Honey Thyme Mustard
  • 2 tbsp whole grain mustard
  • 2 tsp honey
  • 1 tsp fresh thyme leaves
  • 1-2 tsp olive oil
  • a pinch of lemon zest

Method
 

  1. Make the Honey Thyme Mustard by mixing all the ingredients together until smooth. Taste and adjust for flavor.
  2. Toss the arugula with olive oil, balsamic vinegar, salt, and pepper. Set aside.
  3. Slice the baguette lengthwise. Spread the honey thyme mustard on both sides of the bread. Then layer turkey, brie, plum, and arugula.
  4. Close the baguette and gently press. Slice into individual sandwiches and wrap with parchment paper. Enjoy!
