Ingredients

  • 4 oz mezcal
  • 4 oz pear nectar
  • 1 oz rosemary simple syrup
  • 1 1/2 oz fresh lime juice
  • rosemary salt (optional, for rim)

Method

  1. Fill a cocktail shaker with ice. Add mezcal, pear nectar, rosemary simple syrup, and fresh lime juice. Shake for 30 seconds.
  2. Place kosher salt and rosemary on a shallow plate. Run the lime around the rim of the glasses and press the rosemary salt to the rim. Fill the glasses with ice.
  3. Strain cocktail into glasses. Garnish with a sprig of rosemary and a slice of pear.

Notes

To make the rosemary simple syrup: add one cup of sugar, one cup of water, and a rosemary sprig to a small saucepan.  Set over medium heat and stir to dissolve sugar.  When sugar evaporates and mixture starts to boil, place the lid on the pot and turn off the heat.  Steep for 15 minutes.  Strain rosemary out of the pot.  Transfer to an airtight container and keep in the fridge for up to a week.
