Ingredients
  

  • 1 baguette sliced into 1/2" rounds
  • olive oil for brushing
For herbed goat cheese
  • 6 oz goat cheese softened
  • 2 tbsp heavy cream or milk
  • 1 lemon zested
  • 1 tbsp chives chopped
  • 1 tbsp parsley chopped
  • flaky salt and freshly cracked pepper
For marinated cherry tomatoes
  • 1 cup cherry tomatoes halved
  • 1 tbsp good olive oil
  • 1-2 tsp Champagne vinegar or white balsamic vinegar
  • 1 tbsp chives snipped
  • flaky salt and freshly cracked pepper
  • 1 pinch lemon zest

Method
 

  1. Preheat the oven to 375ºF. Brush both sides of baguette slices with olive oil and arrange on a baking sheet. Bake for 8-10 minutes until golden and crisp.
  2. In a food processor, combine goat cheese, cream, lemon zest, chives, parsley, salt, and pepper. Blend until smooth and whipped.
  3. In a small bowl, combine tomatoes, olive oil, vinegar, chives, salt, pepper, and a pinch of lemon zest. Toss to combine evenly. Let sit at room temperature for 20-30 minutes to marinate.
  4. Spread goat cheese onto cooled crostini. Top with marinated tomatoes allowing juice to run off before spooning on to crostini. Serve immediately.
