A distinctly winter version of spiced apple cider, my Aprés Ski Hot Apple Cider focuses on the freshness of the apples and is enhanced with winter spices like ginger, lemon, rosemary, and cinnamon.

Ingredients
  

  • 2 quarts honeycrisp apple cider
  • 2 sprigs rosemary
  • 1 inch peeled ginger
  • 1 lemon, sliced
  • 1 cinnamon stick
  • optional: bourbon or Calvados on the side

Method
 

  1. Pour the apple cider in a large pot. Add lemon slices, cinnamon stick, peeled ginger, and rosemary.
  2. Bring the apple cider to a boil over medium heat, then turn the heat down to low and let simmer for 10 minutes.
  3. Serve warm. A splash of bourbon or Calvados can be added to make the drink a hot cocktail.

Notes

  • The Apres Ski Hot Apple Cider can also be made and then kept warm in the slow cooker so that it will be ready when the skiers return.
