For a romantic picnic outdoors, I always love including a salad that actually holds up to packing and travel. There’s something inherently romantic about a fresh, crisp salad at an outdoor meal—it feels light and effortless while still being substantial enough to make the meal feel complete. The last thing I want in a picnic salad is wilted lettuce and heavy, gloopy dressing. That crispness is what gives a picnic its easy elegance.

This Crispy Chickpea and Couscous Salad was made for exactly that kind of meal. The chewy pearl couscous and crispy spiced chickpeas give it enough substance to stay satisfying long after it’s packed up, while thinly sliced Persian cucumbers, juicy cherry tomatoes, and peppery arugula keep everything fresh and vibrant. Tossed in a creamy whipped feta dressing, every bite feels bright, rich, and layered with texture.

What makes this salad special is the contrast—crispy, chewy, creamy, and fresh all coming together at once. It’s the kind of salad you keep going back to for one more bite. And because the base is built on couscous rather than delicate greens, it holds up beautifully in the fridge or packed into a cooler for picnics, outdoor concerts, or long afternoons at the park.

For my Romantic Picnic Menu, I pair this salad with turkey and brie baguette sandwiches layered with honey-thyme mustard and ripe plum slices, followed by delicate plum rose pastries for dessert. It’s the kind of menu made for vibrant evenings outdoors and dinners that linger well past sunset.

Crispy Chickpea and Couscous Salad with Feta Dressing

My Crispy Chickpea and Couscous Salad is the kind of salad that invites you to keep going back for just one more forkful. Crispy spiced chickpeas, chewy pearled couscous, peppery arugula, cucumber, and cherry tomato tossed in a creamy feta dressing for a side salad that will steal the spotlight.

Ingredients
  

Crispy Chickpeas
  • 1 15oz can of chickpeas, drained
  • 2 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • salt and pepper
Couscous
  • 1 cup Israeli (pearl) couscous
  • 1 1/2 cup chicken or vegetable broth
  • squeeze of lemon
Salad
  • 2 cups arugula
  • 1/2 cup persian cucumber, diced
  • 1/2 cup cherry tomatoes, diced
  • 1/2 red onion, thinly sliced
  • a sprinkle of feta
Feta Dressing
  • 1/2 cup feta, crumbled
  • 1/3 cup plain greek yogurt
  • 2-3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1-2 tbsp herbs (dill, parsley, or mint all work)
  • salt and pepper

Method
 

  1. Start with the crispy chickpeas. Preheat the oven to 425ºF. Drain the chickpeas and pat dry. Then toss with olive oil, spices, salt, and pepper. Roast for 20-30, shaking the pan halfway through. Let them cool and they will continue to crisp.
  2. Make the couscous. Bring broth to a boil and add the couscous. Reduce heat to low, cover, and simmer for 8-10 minutes until broth is absorbed. Drain if necessary and add a squeeze of lemon.
  3. Make the feta dressing. In a jar with a lid you can seal tight, add all the ingredients. Shake for 20 seconds until completely combined. Taste and adjust seasonings as necessary. Add a splash of water if necessary to loosen.
  4. Assemble the salad. In a large bowl combine the arugula, couscous, cucumber, tomatoes, and red onion. Spoon the feta dressing on top and toss. Add the crispy chickpeas on top and a sprinkle of feta just before serving.

Hosting Notes

  • Consider when you want to toss this. If you toss with the dressing before packing, it becomes a bit more like a side salad. If you keep the dressing on the side and toss right before serving, you’ll preserve the crunchy textures more. Both are delicious, so just consider to your liking. For me personally, I like to toss right before serving,
  • You can make the dressing, couscous, and chickpeas in advance. That way, when it’s time to pack this, there will be just a few veggies to slice.
  • Make sure the chickpeas are as dry as possible before tossing with the olive oil and spices. This helps them get extra crispy in the oven.
  • I am serving this salad as a side salad here, but because of the whole grain in it, it makes for a lovely lunch. Just add in some good bread on the side, and you have a ladies lunch.
  • You can customize the salad to your liking. Feel free to add some nuts (almonds or pistachios would be delicious here), or I think adding in some dried fruit like dried cranberry or cherry would be so yummy. Have fun with it and make it your own.

A Picnic, but Elevated

This Crispy Chickpea Salad with Creamy Feta Dressing is designed as part of my gorgeous romantic picnic spread. That menu includes turkey, brie, and plum baguette sandwiches and ends with the most gorgeous little plum roses ever.

You could always serve this salad as the salad course with a host of my menus. I love the idea of adding it to my Elegant Date Night Dinner Menu. That menu features chicken that’s cooked with bacon in a white wine sauce. A salad like this would really hold its own.

I could also see this on the table of my Romantic Farmers Market Menu. It would add to that vegetarian menu and be so delicious next to the roasted carrot tart.

I think this salad would also be so delicious paired with the roasted cherry tomato and balsamic soup on my Cozy Couples Menu. Now that would make for an amazing ladies lunch!
