Roasted Cherry Tomato and Balsamic Soup is tomato soup all grown up. Roasting brings out the sweetness of tomato soup while balsamic vinegar adds depth for this cozy soup that is perfect for a relaxed dinner at home.

Tomato soup is nostalgic for many people, including me. Put me in front of a cup of tomato soup, and suddenly I’m a kid again, warming up from a cold winter day. The thought of it just feels like a warm hug from mom.

The soup in that case always came from a can. It had to! When I started planning my Cozy Couples Soup Night, I thought about that warm nostalgia and wanted to focus on adult-ifying tomato soup. The result is a soup made from fresh tomatoes that plays on the inherent sweetness they bring and marries it with a touch of balsamic vinegar. It’s tomato soup that’s adulting with gusto.

Cherry tomatoes of course have their own sweetness. But roasting them concentrates that flavor, making them almost jammy. And while this will seem like an insane amount of cherry tomatoes, trust me on this one. When they break down, it will start to make sense. The amount of cherry tomatoes here also make this soup extra thick and luxurious.

There’s also an economy to the roasting process here as I’m roasting shallots and garlic along with the cherry tomatoes. This will bring out the sweetness of both and add to the depth of flavor when blended into the soup.

This soup is perfect for a couples night at home and is an excellent choice for giving an at home dinner a bistro vibe. It’s so nostalgic but the addition of balsamic vinegar makes this feel extra special with depth. I paired it with a savory mushroom toast and a fresh blood orange cocktail for my Cozy Couples Soup Night and it holds its own as the star of the meal.

Roasted Cherry Tomato and Balsamic Soup is tomato soup all grown up. Roasting brings out the sweetness of tomato soup while balsamic vinegar adds depth for this cozy soup that is perfect for a relaxed dinner at home.

Ingredients

  • 3-3 1/2lbs cherry tomatoes

  • 3 shallots, sliced

  • 4 cloves garlic, peeled

  • 3 Tbsp olive oil

  • 1 tsp kosher salt

  • 1/2 tsp cracked black pepper

  • 1/2 tsp thyme leaves

  • 1 Tbsp tomato paste

  • 1 1/2-2 Tbsp balsamic vinegar

  • 2 cups vegetable or chicken broth

  • 1/2 cup heavy cream

  • Honey or maple syrup, to taste (optional)

  • Fresh basil, for garnish (optional)

Directions

  • Preheat the oven to 425º F.
  • On a large rimmed baking sheet, add the cherry tomatoes, shallots, and garlic cloves. Drizzle with olive oil, and season with salt, pepper, and thyme. Use your hands to give everything a mix so that all the veggies are covered.
  • Roast for 30-40 minutes until the tomatoes are blistered, collapsed, and caramelized. Switch the broiler on for 2-3 minutes, watching closely.
  • Remove the pan from the oven and dollop tomato paste over the cherry tomatoes. Let it sit for 1-2 minutes so that the tomato paste melts a bit into the veggies.
  • Transfer everything to a large pot and add the vinegar and chicken stock. Using an immersion blender, blend everything until completely smooth. Alternatively, this can be done in a blender and then poured into a large pot.
  • Bring the soup to a simmer and let it gently bubble for 10-15 minutes. Stir in cream. Taste and adjust for seasonings. If you’d like, add a drizzle of honey to balance out the acidity.
  • Serve hot with a drizzle of olive oil on top or a sprinkle of basil. Enjoy!

Notes & Tips

Here are a few suggestions to make this Roasted Cherry Tomato and Balsamic Soup extra special:

  • The soup can be made up to three days in advance and then heated gently on the stove to keep a cozy couples night fuss-free.
  • Garnish the soup with a swirl of cream or basil pesto for a restaurant-worthy upgrade. Serve with a hunky of crusty bread for dipping.
  • I’m serving the soup here as an accompaniment to mushroom toast. But this can also be served in cups as a starter or in large bowls with a small salad for a delicious lunch.
  • The flavors of this soup will continue to deepen as they sit, so leftovers will be especially delicious. You could also make this soup and keep it warm in the slow cooker so that it’s ready for an open house or just a neighbor stopping by.
  • Grape tomatoes would be a fine substitute for cherry tomatoes. You can also use this process with any other tomato, but the soup will likely be less sweet.
