The idea of this soup came when I was working on another recipe that called for roasted cherry tomatoes. I noticed how, once you roast them, they break down and take on an almost jammy like quality. It seemed so perfect for the basis of a soup and a way to make a tomato soup that was elevated and more impressive than a canned version.
This soup is also so easy and hands-off as the tomatoes, shallots, and garlic all roast together on a pan. Roasting the tomatoes brings out their natural sweetness, and the balsamic adds a rich depth that makes the soup feel a little more grown-up than a classic tomato soup. This soup is all about building flavor slowly and simply.

Crispy Mushroom and Ricotta Toast

The classic combo for tomato soup is, of course, grilled cheese. It’s a classic for a reason and always takes me back to childhood. But with a soup that feels this elevated, I wanted a sandwich that felt elevated and unexpected too. The toast trend has been around awhile, but I can’t help loving it. And this mushroom toast is particularly delicious with a lemony ricotta layer underneath mushrooms cooked in garlic, butter, and thyme. It’s a classic for a reason! I also love the bistro vibes that the mushroom toast brings to this meal with crusty, toasted bread.

Blood Orange Gin and Tonic

In the winter, I always get excited about the idea of blood oranges. They’re especially delicious in cocktails, and my Blood Orange Rosemary Martinis are particularly comforting. For this Cozy Couples Soup Night at Home, I wanted a cocktail that was fresh, simple, and in season. A Blood Orange Gin and Tonic feels bright and cozy at the same time, and the citrus pairs beautifully with the roasted cherry tomato soup.
This is an easy cocktail that still feels like a treat. It’s perfect for easing into the evening without turning it into a full cocktail production.

How to Make it Feel Like a Special Night at Home
Here are a few ideas for making this soup night a memorable evening at home. This doesn’t need to be elaborate. The trick is in the details.
- Serve the soup hot, in low bowls. Add a drizzle of olive oil or a pinch of flaky salt for a quick restaurant-worthy upgrade.
- The toast should be served warm too. You can add a bit of balsamic glaze on top to echo the balsamic in the soup.
- Keep the ingredients for the cocktail on hand, including the freshly squeezed blood orange juice. You and your loved ones will probably want a second round and you want to keep the cocktail making as simple as possible.

An immersion blender makes it super easy to blend the soup in a large pot. And beautiful low bowls make it a stunner at the table. All you really need for the mushroom toast is something fun to serve it on. I like to use an interesting shaped wooden cutting board for this because it’s so pretty and relaxed. Nothing special is needed for the cocktails! They’re made in the glass, so they’re super simple.
