This Rustic Chicken Sausage and White Bean Skillet Bake is the heart of the meal, and it’s a total winner. Completely unfussy, it comes together in a single pan and you can serve it right out of that same pan. Total ease. It is comforting and elevated, thanks to simple aromatics and a rich, savory base.
What I love most about a dish like this is how relaxed it feels without being heavy. The chicken sausage, white beans, tomatoes, and kale make for a meal that is good for you while also being just tasty to eat. Add a hunk of crusty bread as this comes out similar to a stew and has delicious juices to soak up. This dish would also make for a lovely simple winter lunch.

Nothing says cozy winter evening in like a bowl of French onion soup. Seriously–with all those layers of cheese and bread, it’s so satisfying. But for this menu, I wanted a side dish that would be inspired by those flavors without actually being soup. Broiling the individual ramekins of soup just seemed like more work than I wanted to do for this casual dinner. Enter my French Onion Soup Casserole.
Inspired by the flavors of classic French onion soup, this casserole delivers deep, savory richness with very little effort. Slowly cooked onions, a touch of creaminess, and a golden baked top make it an ideal companion to the skillet. And don’t worry, I didn’t skimp on the cheese.
Because it can be assembled ahead and baked just before serving, this dish is especially nice for hosting.

Honey & Thyme Vanilla Bean Skillet Cake

While you’re enjoying the dinner, your love might say, “What’s that delicious aroma?” Always ready to impress, you’ll reply, “Oh, just dessert in the oven,” like it’s no big thing. And honestly, it wasn’t! Because you’ll be baking this lovely Honey & Thyme Vanilla Bean Skillet Cake to finish the meal.
The batter is mixed very simply in one bowl then spread out in a hot skillet with butter. I like to add a drizzle of honey and sprinkle of thyme for a rustic note that matches the rest of the menu. Then into the oven this goes. Lightly sweet, softly textured, and best served warm, it’s the kind of dessert that doesn’t steal the spotlight but still feels indulgent.
A dusting of powdered sugar or a spoonful of whipped cream would go lovely here. No complicated plating required. I won’t tell anyone if you choose these leftovers for breakfast tomorrow.

Hosting Tips
Here are a few tips to keep this menu effortless and relaxing:
- Both the chicken sausage skillet bake and the vanilla bean skillet cake can be served right out of the skillet.
- The French Onion Soup Casserole can be made and assembled earlier in the day. I would make this up to the point before it goes in the oven, and then just keep it in the fridge until time to bake. Both the French Onion Soup Casserole and the chicken sausage skillet bake cook at 375ºF, so that will work fine. Keep in mind that you may need to keep the casserole in the oven a bit longer if it’s coming from the fridge.
- The chicken sausage skillet bake is best made and served hot–I wouldn’t make this one in advance.
- The cake is easy to bake as you’re enjoying dinner. But if you’d prefer to bake this earlier in the day, its lovely to enjoy this room temperature as well.
- Leftovers should be stored in an airtight container in the fridge. They’ll make for a lovely lunch tomorrow. You never know when the snow will let up!

What to Drink

Special Tools
For this menu, you’ll need two cast iron skillets–a 10 inch one and a 12 inch one (or, ohmygosh, how cute are these Dolly Parton ones?!). The French Onion Soup Casserole bakes in a ceramic 9×12″ casserole dish, similar to this one. I love a microplane zester for grating fresh parm on the skillet bake. And of course you’ll need a cake server for the vanilla bean skillet cake.
