Golden Chex Mix with Honey and Rosemary

Growing up, my two favorite after school snacks were Rice Krispie Treats and homemade Chex Mix. I had two best friends that are twins, and their mother knew the magic of both of those items–she kept them always freshly stocked!

There is no comparison between homemade Chex Mix and the kind you buy in the store. Yes, the store bought kind is easy, but it just tastes different. The homemade stuff is irresistible and smells absolutely amazing while it’s in the oven.

I’ve come to believe that a great cocktail party really isn’t complete without a snack mix. And at the holidays? It has to be Chex Mix. There’s a sense of nostalgia to it that people just love.

I love playing around with different takes on Chex Mix. For my Sip, Sparkle, and Swoon Cocktail Party, I wanted something subtle, elegant, and with a holiday flavor. The honey and rosemary in this mix really deliver that feel. This Golden Chex Mix doesn’t hit you over the head with spices, but it also has the kind of deliciousness that has you keep coming back for more. All of a sudden, the whole bowl is gone.

I like to add a bit of sparkle to the Golden Chex Mix too by adding a sprinkle of edible gold dust. It just makes the snacks shine a bit.

The Golden Chex Mix looked so cute in my little Christmas tree bowls. Have fun finding little snack bowls to fill up with this mix.

This is the perfect recipe to make with kids. My boys loved adding all the snack-y bits in. They ate a ton of the ingredients, but that’s the fun of it!

Here’s how I make my Golden Chex Mix!

How I Make My Golden Chex Mix with Honey and Rosemary

The best part about my Golden Chex Mix is that it can be made entirely in advance of your party. Make it a day or two ahead and save it in an airtight bag until party time! It’s another thing off your plate the night of the party.

Start by preheating the oven and preparing a baking sheet. I like to make the Chex Mix on aluminum foil spread out on the baking sheet then sprayed with cooking spray. No way do I want my Chex Mix to stick as it bakes!

In a large bowl, mix together all the snack-y components of the Chex Mix like the Chex cereal, the nuts, and the pretzels. Feel free to play around with this combo if there are other things you like in your snack mix. Don’t like cashews? Do peanuts or pistachios instead. Or do a combo! Have fun making it your own.

Then, in a microwave safe bowl, melt the butter. Stir in the honey, chopped fresh rosemary, and kosher salt. Pour that mixture over the snacks and stir so that everything gets coated. Then just spread the mixture out on the baking sheet so that it’s all in a single layer.

Bake for 20-25 minutes, stirring once while baking. Then let cool on the pan.

I like to dust the Golden Chex Mix with a bit of edible gold dust, but it’s up to you. It’s really fun and unexpected, which makes the Chex Mix that much more fun to eat!

For the Sip, Sparkle, and Swoon Cocktail Party, I like to fill up little bowls of this and spread them out throughout the party. That way, as people are enjoying mingling and drinking, there’s a little bowl of snacks to munch on nearby! The Golden Chex Mix would also make terrific holiday gifts for teachers, caretakers, the pool guy–anyone who deserves a little sparkle in their life.

I love trying new ways to make Chex Mix and my Golden Chex Mix is a winner! It’s subtle in its flavoring, but it feels elegant enough for a cocktail party. You might want to make a double batch!
