It’s November, and when the clock strikes 12 on Halloween night, all my thoughts turn to the holidays. Thanksgiving is one of my favorite holidays because I love a full day that is all about the food! I have thrown all sorts of Thanksgiving meals–intimate Thanksgiving for 2, an Italian inspired meal for 10, a Southwestern turkey with chipotle sweet potatoes, a classic Thanksgiving for 20, a meal where a kids dish is a must. While I love a traditional recipe that I know will always be a hit, I also think Thanksgiving is the perfect time to change it up! A good combo of favorites and new ideas is the way to go.
In the run up to Thanksgiving this year, I am so excited to be sharing my very special Romantic Thanksgiving Dinner, which serves 2-4. Think relaxing by the fireplace with your loved one or a small group of friends. Cozy blankets, warm sweaters, and the smell of rosemary wafting from the kitchen this Thanksgiving. My Baked Brie with Honey, Fig, and Thyme couldn’t be simpler to assemble, which makes it a perfect Thanksgiving appetizer. After you spend all that time prepping the actual meal, no way do you want to get caught up with a complicated appetizer. Keep it as stress free as possible. And Baked Brie is the kind of appetizer that’s so easy but is a total crowd pleaser and looks extremely impressive.
Set this out an hour before dinner just to get everyone’s appetite’s going. It’s perfect because it’s small–no one wants to eat so much at the appetizer table that they lose their desire for the big meal!

How I Make My Baked Brie with Honey, Fig, and Thyme
This is so so easy, it’s barely a recipe. Preheat your oven and prepare a baking sheet with a sheet of parchment paper. Then place the Brie wheel on the baking sheet. Spread the fig butter on top of the Brie, then drizzle with honey. By the way, you could try hot honey here, I think that would be divine. Sprinkle with thyme leaves, which are very roughly chopped. And sprinkle with chopped walnuts. You can also switch out the walnuts for pecans or chopped hazelnuts–they would be delicious as well! Then bake for 10 minutes until warm. Transfer to your serving plate and serve with apples, crackers, grapes, olives would be nice here too. Your guests will go crazy over this, and it was so easy!

Baked Brie with Honey, Fig, and Thyme

1 8oz wheel of brie
2 Tbsp fig butter (or fig jam)
2 Tbsp honey
1 tsp thyme leaves
1/4 cup chopped walnuts (optional)
Crackers, baguette, apple slices, grapes for serving
Directions
- Preheat oven to 375ºF. Line a baking sheet with parchment paper.
- Place Brie on the baking sheet. Top with fig butter. Drizzle honey on top, then sprinkle thyme and walnuts on top as well.
- Bake 10-12 minutes until soft and beginning to ooze.
- Serve warm with crackers and apple slices.
