When I envisioned my brunch menu for early Spring, I started with these muffins. I had shared my recipe for Lemon Ricotta Poppyseed Muffins last year, and they remain a huge hit in my household and a fan favorite. The ricotta in the muffin batter just keeps them so light and spring-y–they just make everyone happy. I knew I wanted to be inspired by those muffins when coming up with something new and special for early Spring.
These Orange-Ricotta Muffins are so perfect for welcoming in the first signs of spring. They are incredibly light and delicate, which is so pretty in those early Spring months. Using orange gives them a lovely citrusy flavor that’s really refreshing. There’s also a bit of rosemary in the batter–not so much that you even really taste it in the muffin but that it gives just a lovely perfumed herbal note. They’re topped with some sweet crunch in the pistachio streusel and orange glaze. The color combination is really pretty and welcoming to Spring.
Having these muffins as a building block allowed me to build the rest of my Brunch Menu for the First Signs of Spring. That menu drafts off the citrusy notes of the muffins with a beautiful lemony herbed frittata that’s studded with asparagus and prosciutto. Orange-Ricotta Muffins with Pistachio Streusel and Orange Glaze
Ingredients
Method
- Preheat oven to 375ºF. Line a muffin tin with paper liners.
- Make the streusel. In a small bowl, combine pistachios, flour, and brown sugar. Using a fork, cut the butter cubes into the pistachio mixture until it resembles coarse crumbs. Set the bowl aside.
- For the muffins, start by combining dry ingredients (flour, baking powder, baking soda, and salt) in a medium bowl.
- In a large bowl, whisk ricotta, sugar, eggs, vanilla, orange zest, orange juice, oil, and rosemary until smooth.
- Gently fold the dry ingredients into the wet ingredients. Do not overmix.
- Scoop batter into prepared muffin pan, filling cups about 3/4 of the way. Top with the pistachio streusel, adding generously on top.
- Bake 20-25 minutes until a toothpick comes out clean. Let muffins cool in the pan 5 minutes, then transfer to a wire rack to cool.
- Once the muffins are cool, drizzle with the orange glaze. To make the orange glaze, whisk the powdered sugar with orange juice and pinch of salt. The consistency should be thick enough to drizzle.

- Use whole milk ricotta for the best texture.
- Don’t skip the zest — it’s where most of the flavor lives.
- For taller muffins, let the batter rest 10 minutes before baking.
- A light glaze is better than a heavy one — think sheen, not frosting.
- For presentation, sprinkle a few extra crushed pistachios or a pinch of fresh orange zest over the glaze before serving.
