Lemon-Herb Boursin Frittata with Prosciutto and Asparagus

Hosting a Spring brunch will be oh-so-easy with my Lemon-Herb Boursin Frittata! This egg bake throws on its Spring dress with a lemony herb flavor, crispy asparagus, and salty prosciutto welcoming in the first signs of Spring.

In Early Spring, I’m looking for dishes that make me think of sunshine. I want light, bright, full of flavor. I’m over soup season. No thank you to loads of cheese (ok, who am I kidding, loads of cheese is always welcome. I’m looking at you French Onion Soup Casserole). I’m ready to embrace all the first signs of Spring with wild abandon.

And that kind of wild abandon in the kitchen leads to this beautiful Lemon-Herb Boursin Frittata. This is that dish. Sunshine on a plate. First off, the colors here are absolutely gorgeous. The pale yellow eggs with bright green asparagus and pink prosciutto are all highlighted by those beautiful herbs running throughout. Just to look at it is full sunshine on a plate.

The flavor of this frittata really feels like Spring. The citrus/herb combo is fresh and bright. The Boursin cheese is doing double duty both as a lovely herbal note and providing creaminess to the eggs. And of course the taste of asparagus always makes me think of Spring.

This Lemon-Herb Boursin Frittata is delicious on its own for a special family brunch or to entertain friends. I designed it as part of my Brunch for the First Signs of Spring Menu which also includes a surprising Spring salad on the side made with roasted broccoli, cheddar cheese, and farro. The menu also features one of my favorites, bakery-style orange ricotta muffins with an incredible, crunchy pistachio streusel on top.

Lemon-Herb Boursin Frittata with Prosciutto and Asparagus

Ingredients
  

  • 1 cup asparagus tips cut into 1-2 inch pieces
  • 1 tbsp olive oil
  • 8 large eggs
  • 1/4 cup milk or half and half
  • 2-3 oz Boursin cheese
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp chives chopped
  • 1 tbsp italian parsley chopped
  • 4 oz prosciutto torn into small pieces

Method
 

  1. Preheat oven to 375ºF.
  2. In a cast iron pan or oven safe skillet, heat the olive oil over medium heat. Add the asparagus tips and a pinch of salt. Cook for 2-3 minutes until the asparagus is vibrant.
  3. In a medium bowl, whisk together the eggs, milk, crumbled Boursin, lemon zest, lemon juice, herbs, a pinch of salt and pepper until smooth but not overly frothy. Stir in the prosciutto pieces.
  4. Pour the egg mixture over the asparagus in the skillet. Let cook 2-3 minutes to set the edges, then transfer to the oven.
  5. Bake 12-15 minutes until golden at the edges and just set in the middle.
  6. Sprinkle with fresh herbs, lemon zest, or a pinch of salt before serving to finish.

Tips for the Perfect Frittata

  • Don’t overbake — dryness is the enemy. Pull it when the center barely jiggles.
  • Use whole milk ricotta-style Boursin for the creamiest texture. You can switch up the flavor of the frittata by using different flavored Boursin cheeses.
  • Let it rest 5–10 minutes before slicing for clean wedges.
  • A squeeze of fresh lemon right before serving makes it taste even brighter.
