I have the perfect cocktail for your next girls night! A Grapefruit Lavender Margarita practically SCREAMS Spring get together. These cocktails have that sour kick from the grapefruit, but the lavender simple syrup gives them a really special, sweet, floral touch that feels like it’s dripping in femininity.

This time of year always gets me thinking about getting outdoors and celebrating with friends. Spring brunches and garden parties–my favorites. There are so many beautiful colors everywhere…so why not in my glass? I love the vibrant pink of a cosmo or the jewel-tone red of my Blood Orange Rosemary Martinis, but there’s something about this subtle, ballet slipper pink that feels so special and spring-y. Just gorgeous!

Lavender also feels very of-the-moment right now–I’m seeing it absolutely everywhere. Even Starbucks is in on the trend! I love their Iced Lavender Oatmilk Latte–sooo good.

I had some culinary lavender on hand from making a delicious lavender sangria, and I’ve been trying to think about other ways to use it. I think the key to using any kind of floral note, whether it’s lavender, rose, etc., is to find the right balance. Too much and it feels like you’re eating your garden, which isn’t appealing. But just a touch can make a recipe feel really unique!

Making the lavender syrup also has the added benefit of making your home smell like lavender, which is very inviting and totally relaxing. It makes kicking back and enjoying this drink that much more fun and unwinding.

This is seriously the perfect cocktail for any event where you want to impress the ladies–baby showers, wedding showers, Mother’s Day, or even just having a friend or sister over for dinner! Grapefruit Lavender Margaritas are so elegant, classy, and full of everyday romance. They also go down super easy so don’t be surprised if your elegant get-together turns into a more raucous affair!

Here’s how I make my Grapefruit Lavender Margarita–super simple!

How to make Grapefruit Lavender Margaritas

I start this recipe by making a lavender simple syrup. This is really easy, and you can use the lavender syrup in a host of different cocktail. Or try sweetening your coffee or Greek yogurt with it! I treat this like making tea–mix the lavender and sugar in the bottom of a glass pitcher. I used white sugar here, but you could play around and try brown sugar, turbinado, or even honey to change the flavor. Good old white sugar will do the trick just fine though. Boil a cup of water and then pour it over the sugar and lavender. Let the lavender steep for 10 minutes, like tea. Strain it into a different glass container and cool completely.

The simple syrup turns out clear. If you would like it to have a more purple look, you could always use an organic food dye. Or, throw a handful of frozen blueberries into the syrup right after you add the hot water so they steep along with the lavender–that will give you a nice lavender color as well without changing the flavor.

Now, it’s cocktail time! Super simple–fill your cocktail shaker with ice and add all the ingredients–grapefruit juice (freshly squeezed, of course), tequila, Cointreau, lime juice, and lavender syrup. I think this is a nice balance of sweet and tart, but if you like your cocktails more on the sweet side, add a bit more of the syrup (increase to 1 1/2 oz per drink). Shake her up and pour in glasses filled with ice. I did not choose to rim my drinks here, but you could easily rim with salt for another flavor component. I like to garnish with a sprig of lavender for fun.

Ingredients

  • 4 oz freshly squeezed grapefruit juice

  • 3oz tequila

  • 1 1/2 oz Cointreau

  • 1 1/2 oz freshly squeezed lime juice

  • 2 oz lavender simple syrup (directions below)

  • Lavender Simple Syrup
  • 1 cup sugar

  • 1/4 cup culinary grade dried lavender

Directions

  • In a cocktail shaker filled with ice, add your grapefruit juice, tequila, Cointreau, lime juice, and lavender simple syrup. Put the lid on tightly and shake for 30 seconds. Pour over glasses filled with ice. Garnish with lavender sprigs.
  • To make the lavender simple syrup: Add sugar and culinary lavender to the bottom of a glass pitcher. Heat one cup of water until boiling, then pour it over the sugar and lavender. Stir until the sugar dissolves. Then let the lavender steep in the sugar/water mixture for 10 minutes. Strain the simple syrup to remove the lavender.

Notes

  • If you’d like the lavender syrup to have a more lavender color rather than clear add a handful of frozen blueberries to the mixture after adding the hot water.
