Late August has its own specific brand of chaos. The kids are back at school, everyone is figuring out what the routine should look like this year, there’s lots of last minute school supplies to pick up, and meanwhile it’s still 100ยบ outside. By the time Friday rolls around, an at home happy hour is both a luxury and a necessity.

Which is exactly the place my husband and I found ourselves last Friday. The first week of school is in the books and now it’s time to relax…preferably with something really cold.

I’ve been making a ton of smoothies for my kids as they ease back into school. It’s been a fun way to get them to eat fruit in the morning before school, and they love to help make them. I’m hoping to be able to share some of those recipes here in the near future!

As a result, I have a ton of frozen bananas tucked into my freezer just in case. It was time for them to get a more tropical and more adult glow up.

My Frozen Banana Coconut Ginger Cocktail gives serious vacation vibes, even when you’re just hanging out with your loved ones at home. It’s impossible to not feel those island breezes as you take your first sip. As in the smoothies, the cocktail comes out pretty sweet, which is all sweetness from the bananas themselves–no added sweetener or syrups here. This is also the kind of recipe I love because it only has a few ingredients and each ingredient you can taste doing its part.

I think the dash of cinnamon here is a little unexpected, but don’t skip it–there’s something about that inviting aroma that brings the entire cocktail together!

How I make my Frozen Banana Coconut Ginger Cocktails

These cocktails are so low maintenance–the only thing you need to remember to do is freeze the bananas. Once you freeze the bananas you’re only a few minutes away from island time.

Grab your blender and add the frozen bananas. Then add in the Malibu rum and ginger ale. Give the whole thing a whirl and then start adding cups of ice. You probably want to start by adding 1 cup of ice and blending it first. Then decide about the consistency and whether you’d like to add more. I added two cups of ice to my drinks, but this a matter of preference.

Pour the drinks into two cocktail glasses and add a dash of cinnamon. A paper umbrella is always welcome too.

That’s it! Now go kick back and enjoy. My husband and I enjoyed these with a plate of coconut shrimp–an excellent pairing!

Ingredients

  • 2 bananas, frozen

  • 3/4 cup Malibu rum

  • 3/4 cup ginger ale

  • ice

  • dash of cinnamon

Directions

  • Add the frozen bananas to a blender. Pour in the Malibu rum and the ginger ale. Put the lid on and turn the blender on until combined.
  • Add a cup of ice and blend. Check for consistency. Add more ice and blend as needed until you get the consistency you want for the drinks.
  • Pour into cocktail glasses. Add a dash of cinnamon to the top.
  • Serve, kick back, and enjoy!
