It never occurs to me to make pizza at home because I always think of it as a convenience food. We have wonderful pizza places near us, and it’s a favorite of my kids for a takeout dinner at home. So it just never crosses my mind to make my own version.

But why not? The truth is, making pizza at home is not only simple, but it’s really fun!

It’s of course fun to have a pizza night and play around with all sorts of toppings with the kids. They always end up trying something they wouldn’t usually try, like peppers or olives.

A pizza night, though, is even more fun when the pizza is really geared more toward the adults. Enter my Brussels Sprout, Pancetta, and Goat Cheese Pizza and now we are talking. The ingredient list alone has me absolutely drooling.

This is a perfect Fall pizza that gets everyone excited. The Brussels and pancetta give that classic brussels/bacon flavor, and goat cheese adds a creamy tang to this pizza. This is absolutely perfect paired with a crisp glass of white wine…or maybe a pumpkin beer! This would also go great with my Pumpkin Blondies for dessert.

Either way, my Brussles Sprout, Pancetta, and Goat Cheese Pizza definitely levels up your pizza, and is ready to go in 30 minutes or less. She’s a real beauty! This is how I make the pizza:

How I Make My Brussels Sprout, Pancetta, and Goat Cheese Pizza

Making pizza at home is super easy and fun–it tastes so much better than a frozen pizza! Plus, it will make your entire home smell amazing. Keeping it seasonal and making one that feels just right for Fall is even better.

To make the pizza, start with a ball of pizza dough. I like to buy mine at the grocery store–Trader Joe’s and Whole Foods both have really good versions. You can also, of course, make your own from your favorite pizza dough recipe.

Let the dough come to room temperature. Sprinkle some flour on your counter or cutting board to roll the dough. Using a rolling pin, roll the dough to your desired thickness. I did mine about half an inch. Don’t stress if it’s not perfectly round. This is one of the fun things about at home pizza–it can be absolutely whatever shape you like!

Transfer the pizza dough to a baking sheet. Brush olive oil all over the top of the dough. Then sprinkle the minced garlic all over it too. Next comes the mozzarella cheese (or any other good melting cheese you like! I used an Italian blend.)

The goat cheese goes on next–crumble it on top. You want fairly larger crumbles of goat cheese so that it doesn’t just melt into the pizza. Top with the diced pancetta and then the shredded Brussels. I like to buy the Brussels already shredded to make it really easy. Then drizzle with olive oil.

Bake the pizza and enjoy how heavenly it smells! It will be done after about 10 minutes, when the crust is beginning to brown. Let it cool slightly before slicing and serving.

I love to drizzle mine with a bit of hot honey. You could also try a drizzle of maple syrup on top of the Brussels as well. Yum!

Ingredients

  • 1 ball pizza dough

  • flour for rolling

  • 2 Tbsp olive oil, divided

  • 2 cloves of garlic, minced

  • 1 cup mozzarella cheese

  • 2oz goat cheese

  • 4oz pancetta, diced

  • 5oz brussels sprout, shredded

  • hot honey, to drizzle (optional)

Directions

  • Preheat the oven to 475ºF.
  • Let the pizza dough come to room temperature. Sprinkle a bit of flour on your cutting board and roll the pizza dough to your desired thickness. Transfer to a baking sheet.
  • Brush the top of the pizza dough with 1 Tbsp of olive oil. Sprinkle the minced garlic all over the pizza dough, and top that with mozzarella cheese.
  • Crumble the goat cheese and spread on top of the mozzarella cheese. Add the diced pancetta on top. Sprinkle the Brussels on top of the pancetta. Drizzle the top of the Brussels with the last tablespoon of olive oil.
  • Bake for 10-12 minutes, until the crust is beginning to brown. Let cool and then slice. Drizzle individual slices with a bit of hot honey if you like and enjoy!
