An ending that acknowledges everything that came before but leaves you feeling lighter and a little more hopeful. The same is true after a beautiful dinner — a dessert that gently closes the evening on a sweeter note.

The blackberry may be known for its dramatic flair. Tart, juicy, and deeply colored, it brings that rich purple hue to everything it touches. But the blackberry has a softer side as well. Paired with cinnamon, vanilla, and a touch of lemon, its sweetness shines through while still keeping that bright berry character.

My blackberry and cinnamon skillet cake is equal parts rustic and elegant. Swirled with ribbons of blackberry throughout, the cake bakes into something tender and lightly sweet — the kind of dessert that feels perfectly suited to spring. Served warm directly from the skillet, it’s both simple and inviting.

Ingredients
  

  • 6 tbsp butter divided
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 1/2 cup buttermilk
  • 1/2 cup fresh blackberries lightly smashed
  • whipped cream for topping

Method
 

  1. Preheat the oven to 350ºF. Place a 9" oven safe skillet in the oven while it's heating up. Once heated, remove the skillet from the oven and melt 2 tbsp of butter in it. Swirl the butter and let cool just slightly.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, whisk together sugar, eggs, 4tbsp melted butter, vanilla, lemon zest, and buttermilk.
  4. Add the dry ingredients into the wet and stir gently until just combined.
  5. In a small bowl, mash the blackberries with 1tsp sugar. Leave the blackberries chunky rather than fully juiced.
  6. Pour batter into the hot buttered skillet. Dollop the blackberries all over the top of the cake. Swirl them using a toothpick.
  7. Bake 28-32 minutes until the center is set and the edges are golden.
  8. Let cool before slicing. Serve with whipped cream and fresh blackberries. Enjoy!

From My Table

  • I think there’s nothing more romantic than the aroma of cake in the oven while you’re enjoying dinner with a special someone. This cake, though, could also easily be made in advance and just held until dessert time.
  • Top with whipped cream or blackberry sauce. For a bit of decadence, a scoop of vanilla ice cream would be lovely as well. I like the naked cake look and went with that here.
  • I like to serve this cake warm and still in the skillet, directly on the table. There’s something very cozy and rustic about a cake still in the skillet.
  • The melted butter in the skillet pan keeps the edges of this cake extra crisp.
  • Keep leftovers in an airtight container in the fridge.
