Spring right around the corner always feels like there is a bit of hope on the horizon. To celebrate those first signs of Spring, I’m embracing all of the beautiful citrus, herbs, and colors of Spring with this Bright Early Spring Dinner Party Menu! This meal is packed with flavor and color–perfect to welcome in the season.

Springtime is one my absolute favorite times of year, both in the garden and in the kitchen. I love seeing everyone’s flowers come into bloom and enjoying fresh cut daffodils on the table. There’s always an air of excitement in Spring as we start to break out of the doldrums of Winter.
So I’m embracing those first signs of Spring with a dinner party menu that’s ready to usher in the season, no matter what the groundhog had to say. Even if you’re still buried under snow outside, a bit of Spring in the kitchen just seems to bring a bit of hope. To me, that means cooking with fresh vegetables, bright herbs, and of course some citrus. It’s about serving a menu that’s a bit lighter but still fulfilling and bright on the palate.
To celebrate the beginning of Spring, I’m serving a dinner party anchored by a delicious salmon. This salmon is roasted simply with a mustard and dill sauce that gives it so much bright flavor. Crispy smashed potatoes layered over whipped goat cheese add richness and texture to the menu without feeling heavy. And for dessert, warm honeyed roast grapefruit with softly whipped cream finishes the meal on a clean, citrusy note.
This is a delicious and relaxed meal for entertaining right at the beginning of the season and throughout the warmer months ahead!

Spring Salmon with Mustard and Dill

A lighter dish like salmon is so perfect in Early Spring. I think there’s something about that pink color that makes me think of tulips, colored eggs, and all things Spring! This salmon is a dream to make, serve, and eat. It’s roasted simply with whole grain mustard and dill that creates this kind of delicious crust in the oven. The little mustard seeds give a tiny pop in your mouth as you eat it that I love. Dill is classic with salmon and also has that beautiful spring air to it. This is a perfect dish for hosting because it can be served warm or at room temperature. You can’t go wrong here.

Crispy Smashed Potatoes with Whipped Goat Cheese and Dill

To echo and drive home the dill theme, I’m adding dill to whipped goat cheese and then topping it with warm, crispy potatoes. I’m a potato kind of girl, and I’ll take them in absolutely all forms. But these baby potatoes are so fun. They’re smashed after boiling and then crisped up in the oven for a truly beautiful texture. I love how the hot potatoes warm the goat cheese underneath. It makes the whole dish feel complete (no ketchup needed), and they work beautifully with the salmon.

Honeyed Roast Grapefruit with Whipped Cream and Pistachio

I can’t tell you how excited I am about this roasted grapefruit dessert. This dish absolutely yells Spring with its color, citrusy flavor, and its warmth. Like the salmon, the pink of the grapefruit makes me think of all the spring things and is just so pretty. The grapefruit segments get hot in the oven, concentrating their flavor. I love it topped with the slightly sweetened whipped cream. The pistachios on top are the perfect touch here. I love this dessert for a dinner party because sometimes I want something like this that doesn’t involve me baking a cake. I can roast these while clearing the dinner plates and just keep the party flowing.

Hosting Notes
- The potatoes can be boiled earlier in the day and roasted just before serving.
- The goat cheese can be whipped ahead and kept refrigerated; let it soften slightly before plating.
- The salmon can rest for 10–15 minutes before serving and is just as lovely slightly warm.
- The grapefruit can be prepped in advance and roasted while you’re clearing dinner plates.
- A simple green salad (try my Simple Arugula Salad) or a glass of chilled white wine is all you need to round things out. If you’d like a cocktail, my Grapefruit Lavender Margaritas would be a perfect Spring accompaniment!
Tools You’ll Need in the Kitchen
To make this Bright Early Spring Dinner, you’ll need a few tools in the kitchen. For the salmon, you’ll need a rimmed baking sheet and parchment paper. I like to use these sheets as I was CONSTANTLY battling the rolled kind of parchment paper and couldn’t deal. For the potatoes, you’ll need a large colander to drain them and a rimmed baking sheet to roast them. And for the grapefruit, a baking dish will help keep them upright as they roast.
