I’m so excited to share my recipe for One Pot Sun-Dried Tomato and Feta Gnocchi with you today–it’s an easy, one pot dinner that screams everyday romance with a luxurious side!
Growing up in Pennsylvania, I did not have much gnocchi. My community was all about the meat and potatoes. When it came to pasta, it was much more of the Olive Garden variety–spaghetti and meatballs, fettucine Alfredo. My dad is an excellent cook and baker, but I remember things like seafood, twice-baked potatoes, crab-stuffed tomatoes, muffins, bread, and whoopee pies being more of his specialty than Italian food. So I was definitely an adult before gnocchi entered my life, and when it did, I was honestly shocked. If there’s anything on the Italian menu that screams Pennsylvania dutch, it’s gnocchi! Light, pillowy-like dumplings, it seems so perfect for a community that loves a good potato dish. Just in a classier form!
I’m so glad we’re able to buy pre-packaged gnocchi now as they make for such an easy, elegant dinner. Though I’ve made them myself in the past, for this recipe it’s so easy to use the pre-packaged kind, and they taste great. I love that this is one pot and that the gnocchi cook in the sauce. Just makes getting a meal on the table for your loved one that much easier, faster, and with less clean up–it’s win win.
While I’ve enjoyed gnocchi in lots of dishes, I decided to give this one a little Mediterranean flare by adding sun-dried tomatoes, spinach, and feta. Yes, you could keep this more Italian and do goat cheese rather than feta. But I like the little cross-cultural nods here, and the dish is so delicious this way.

My husband is a HUGE lover of gnocchi, and he was incredibly wowed by this dish. I think it’s the one-pot method that adds to the luxuriousness of this, even using milk here rather than heavy cream. I will also say he has a huge appetite–he could seriously probably eat this entire skillet on his own. I served it as a side dish to a mediterranean baked chicken, and it was divine.
Try this on a weeknight when you want to get dinner on the table fast so you can enjoy time with your loved ones. This one is truly luxurious and a wonderful way to unwind.

Here’s how I make it!

How I make One Pot Sun-Dried Tomato and Feta Gnocchi
Start by draining your sun-dried tomatoes and using some of the oil to heat up in a sauce pan. Then once it’s hot, add the sun-dried tomatoes, garlic, shallot, and salt and pepper to the pan. Cook for a few minutes until the onions have softened.
Then comes my favorite excuse to open a bottle of wine and have a glass! Add about a quarter cup of dry white wine to the pan. Let it cook for a few minutes–it will smell heavenly! Then add chicken stock and milk and stir. This is the ‘broth’ mixture for your gnocchi to cook in, so go ahead and add a pound of gnocchi to the party. Bring the mixture to a boil, then let it simmer for about 5 minutes. You’re looking for the gnocchi to become soft and the sauce to thicken.
Now add the Parmesan followed by the spinach. Let the spinach do its magic disappearing act for a few minutes, then take it off the heat. Test for salt, keeping in mind that you will add feta crumbles to the finished dish (so don’t oversalt as feta can be a bit salty too).

Ingredients
1 shallot, diced
4 garlic cloves, minced
8.5oz jar sun-dried tomatoes
1/4 cup dry white wine
3/4 cup chicken stock
1 cup milk
1 lb potato gnocchi
2/3 cup grated parmesan cheese
2 cups spinach, chopped
4oz feta, crumbled
Directions
- Use a colander to strain the sun-dried tomatoes, allowing the oil to drain into a bowl. Then, add 1 Tbsp of the sundried tomato oil to the bottom of a large skillet or saucepan over medium heat. While the oil heats up, chop the sundried tomatoes.
- To the skillet add shallots, garlic, sun-dried tomatoes, and salt and pepper. Cook for 5 minutes until softened.
- Add in the white wine and cook for a minute or two. Stir in the chicken stock and then the milk. Add the gnocchi and stir. Bring the mixture to a boil and then reduce to a simmer. Cook, stirring often, until the gnocchi is cooked, about 5 minutes.
- Stir in the parmesan. Add the spinach. Stir until the spinach wilts, 1-2 minutes. Taste and add salt as needed. Remove from heat.
- Crumble the feta on top of the gnocchi. Serve and enjoy!
